Easy Elk Meatloaf Recipe

In our family, it doesn't matter who notches the tag, we all enjoy the food! Here is a very easy meatloaf recipe using the ground burger from the elk my husband was able to harvest during our hunting trip to Colorado. The recipe is quick and easy for any day of the week, and uses ingredients most people will have on hand.



Ingredients

  • 1-1/2 lbs elk burger

  • 1 egg

  • 1/2 tsp salt

  • 1/2 tsp pepper

  • 1 tsp garlic powder

  • 1 tbsp Worcestershire sauce

  • 1/2 cup of bacon pieces

  • 3 sticks of string cheese, diced

  • 12 crackers, crushed

  • 1 cup mushrooms, diced


Directions

Preheat over to 350 degrees.


Mix all ingredients together thoroughly. Form into a loaf and place into a glass loaf pan. 


Cover with foil and bake for 30 minutes. Remove foil and bake for another 10-15 minutes for the top to get golden brown.


Remove from loaf pan, slice and serve with a baked potato or mashed potatoes & gravy and a veggie. Enjoy!
