My family and I recently started the Keto Diet at my house. While we can eat many delicious things, I miss my grouse tenders (or any bird tenders) so looked up many different recipes for keto nuggets/tenders online and came up with my own.
Servings: Approximately 10
Ingredients
2 cups almond flour
1 tsp garlic powder
1 tsp black pepper
2 tablespoons olive oil
1 tsp table salt
3 large eggs
1 large wild turkey breast (or half one) about 2 pounds of turkey
Optional: add 1/2 cup coconut flakes into the flour
Directions
Cut the turkey breast into 2-3 inch by ½ inch strips. Mix all the dry ingredients in an 8x8 glass baking pan.
Beat the egg in a separate shallow dish and add in the olive oil. Dip the turkey in the flour mixture and coat. (I learned this when I was looking for a keto onion ring recipe; it really helps to make the tenders extra crispy!) Move the coated turkey to the egg mixture, coat and then return to the flour mixture.
Cook tenders in a pre-heated Air Fryer at 400 degrees for 8 minutes.
