Recipe: Air-Fryer Fish Nuggets

It seems like everyone who has an air fryer absolutely loves it. I received one as a gift from my mom and admit that I've been rather slow in figuring out how to use it. So I'm on a quest to figure it out and find some recipes that I actually like. I've tried elk steaks and boneless pork chops, both of which turned out pretty good. And I've tried turkey nuggets which I ruined because I set the timer wrong and fries because I filled the basket with too much food.


My latest attempt was fish nuggets. I found a few recipes to get an idea of the best way to cook them, what temperature, and how long. They turned out decent, although a little dry. I would definitely try this again but cook for a little less time (the recipe below reflects the updated time).




Ingredients:

  • 2-3 fresh fish fillets (I used spotted sea trout)

  • 2 eggs, whipped

  • Seasoned panko crumbs

  • Cajun seasoning

  • Pam or olive oil


Directions:

Cut fish fillets into 1" x 1" nuggets, trying to keep the size consistent among all of the pieces. Roll in egg, then coat in Panko crumbs. Press the panko into the filets to ensure they get good coverage.


TIP: Panko crumbs stay much crispier than regular breadcrumbs. You can purchase pre-seasoned panko or season your own with your favorite spices.


Place fish nuggets in the air-fryer basket in a single layer. You may need to cook 2-3 batches depending on how many nuggets you have. Spray nuggets with Pam or brush on a coat of olive oil.


Depending on the air fryer, you may have a pre-set for fish. Mine does so I used that for the temperature; if yours doesn't, heat to 400. Cook 6-7 minutes. Flip the nuggets halfway through with tongs, and spray with Pam or brush with olive oil. When cooking is complete, sprinkle with additional Cajun seasoning for added flavor.


Serve with your favorite dipping sauce and side item.
